I just made Creamy Vegan Tomato and Basil Soup with cashew cream. I could have just gotten a straw and had the cashew cream; it was delicious! I was so inspired by it I then made organic cashew chèvre and it is the most delicious thing I’ve ever tasted. I am literally scooping up the cashew chèvre with cucumber spears and I think I am in an altered state.
It tastes like my childhood. When I was a kid my mom used to make nut milks, nut cheeses; all sorts of yummy hippy stuff. I love my roots.
