Here is the recipe I made up if you want to try it. Make it your own and add whatever flavors make your palate dance.
All organic ingredients. 3 eggs, 1 clove of garlic, 8 cherry tomatoes, 1 zucchini, 1/2 onion, 10 fingerling potatoes or more if you want to make a larger batch of hash browns, parmesan cheese, rosemary, sage, paprika, salt, pepper, and love! I shredded the potatoes and tossed with some olive oil, salt, pepper, fresh chopped rosemary and sage from my garden, and a dash of paprika for a little kick. Baked in oven at 350 for 20 minutes or so, checking for your desired level of doneness. We like ours crispy so we baked it a little longer. I sprinkled parmesan cheese on it after I served it, as picture shows, but I would sprinkle while in oven so it gets baked into it and gets all yummy. For the Zoodle egg scramble I sautéed the chopped onion and garlic until slightly browning, then I tossed in the zucchini noodles and sliced tomatoes and set it aside in a separate bowl. In the same pan I scrambled the eggs. Then I tossed it all together. I served it with a little organic, sugar free ketchup with a dash of hot sauce mixed in. Enjoy!
